“I grew up in Sussex and in June I spent two days on a 1-2-1 with Graham and Jaycee. My focus was to build my confidence to enable me to develop and grow the private dining offering at my 4-star gold B&B in the Highlands of Scotland. I had a very clear brief in my head as to what I wanted to achieve through my time with Graham; the brief was to ensure my guests had the opportunity to choose dishes a menu which focussed on the best that the Scottish larder has to offer. My B&B is on the border of the Highlands and Moray which means it is in the heart of some of the best food and drink producers Scotland has to offer. "Given gift vouchers to attend a one day course with Graham at Thackerys, my sister and I found the whole experience most impressive. After being welcomed with a cup of coffee at 09.15 we sat and watched an educational demonstration by Graham of how to cook a superb 3 course meal. Whilst my sister and I are good cooks we couldn't believe how easy it all was once introduced to some inside secrets. Later on we recreated all three courses and were served the cheese soufflé starter and fillet of beef main course, which we had prepared, accompanied by wine. The date and ginger puddings with delicious salted caramel sauce came home with us. If asked what we want for Christmas I think we would both say another course at Thackerys please!"
